The mountain vineyards surrounding the Napa Valley have rockier soils and better drainage. They tend to produce smaller grapes with less juice and more skin. All of a wine’s color, tannin, and much of its flavor complexity comes from the skin. Mountain vineyards produce more intense, deeply colored and more structured wines. Howell Mountain and Mount Veeder produce some of the biggest cabernets.
